I’ve tried sous vide cooking before with great results but I had no idea how many things I could be making sous vide style untile Vesta Precision introduced me to the “Everyday Sous Vide, It’s All French To Me” cookbook by Chelsea Cole.  I quickly learned that I could use sous vide for much more than cooking meat to the perfect temperature.  From pickling to stuffed burgers to delicious desserts, this time saving tool lets you serve all your favorites with ease.

When I found out I could create “Better-than-Starbucks Egg Bites,” I was totally sold on adding sous vide cooking to my weekly routine!  It was a great way for me to re-create a taste I love.  You can also find plenty of delicious recipes on the Vesta Precision website to start your sous vide experience.

Because I have all the Caramelized Onion and Brie Egg Bites recipe featured in “Everyday Sous Vide, It’s All French To Me” ingredients on hand, it’s a great place to start.  Instead of onions, I swapped in shallots and instead of Italian seasoning, I swapped inn a Tuscan herb blend.  The results were phenomenal!

It’s incredible how fresh the egg bites were and how perfect they turned out.  With the Vesta Precision Imersa Elite all I need to do is set up an immersion bath, program the temperature and time, whip up my ingredients, pour them in a jar, seal and allow them to cook sous vide style for 30 minutes.

Finding the right words to describe the result of cooking egg bites via sous vide is a little difficult.  It’s unlike any other preparation method.  The egg bites turn out fluffy, silky, and they simply melt in your mouth.  The  flavors are intense, yet incredibly pleasing.  It’s your own little gourmet breakfast with no professional chef status necessary.

This smart Wi-Fi-enabled Vesta Precision Imersa Elite has a large digital display that makes it easy to keep an eye on timing and progress.  It’s unique “flip design” allows the unit to easily fit on any immersion bath vessel you choose.  I used our pasta pot to make sous vide egg bites.  I could have just as easily used a crock pot, a dutch oven or any other deep well cooking pot.

The Imersa Elite is compact, fitting in any standard kitchen drawer or cabinet, which is a great space saver.  I found the temperature to generally be consistent within a few degrees, giving you peace-of-mind while cooking.  If the temperature falls below the desired temperature the machine alerts you.  The machine also lets you know if the water level is too high or too low, taking all the guess work out of sous vide cooking.
