The latest weapon in that arsenal is the NutriBullet Select.

My experience with the NutriBullet Select

This little wonder is like a kitchen magician. Like you’d expect, it makes short work of smoothies, giving me a delicious and nutritious meal on the go in seconds. However, I’ve found so many more uses for it!  For example, I can whip up some hummus, salsa, or pesto with a few short button pushes.

The NutriBullet Select dices and chops vegetables with ease – if a recipe calls for fresh garlic and onion, I just throw it in there and pulse. In seconds, it’s done. I don’t shed a single tear and my hands still smell great!

Other things you might use a NutriBullet for are grating parmesan cheese, grinding coffee beans, and chopping nuts and/or cookies for sundae toppings…think of the monetary savings in convenience packaged foods alone! You can also make your own gourmet concoctions easily that way.

Speaking of gourmet concoctions, experts say that having meals planned is the key to weight loss. I could go on for days with ideas, but my favorite things to use the NutriBullet Select for is soup. Prepping ingredients no longer takes all day. Chopping broccoli or carrots and even shredding potatoes for soup is done quickly, safely, and uniformly for even cooking. In a few seconds, I whipped up the base for my delicious and nutritious Farm Fresh Tomato and Basil Soup. It was so easy.

Tomato Basil soup is a treat I can prep straight from our garden as the main ingredients are exactly what’s in the title.  Basil is known for its antioxidant and antimicrobial (germ-fighting) properties.  Tomatoes are low in calories and rich in vitamins.  Together, they are the perfect blend of goodness, creating a vibrant harmony for your taste-buds!

In the Spring and Summer, I love to serve this soup cold straight from the blender.  Toss a few croutons on top and you have a very refreshing lunch.  My sons prefer the soup warm at dinnertime with grated Parmesan cheese sprinkled on top.   If you want a little hardier soup, add some grilled chicken to it while it’s simmering.  Or, if you are in the mood for an indulgent treat, adding heavy cream creates a rich, restaurant-style soup that’s great for holidays or special occasions.  I opt not to add salt and pepper to my soup as the ingredients really shine on their own, but if you like a little seasoning, feel free to add a dash of each in.

Prep Time: 5 minutes

Cook Time: 30 minutes

Farm Fresh Tomato Basil Soup

Ingredients

  • 4 Roma tomatoes
  • 4 cups tomato juice
  • 15 fresh basil leaves
  • 2 teaspoons garlic, minced
  • 1 tablespoon extra virgin olive oil
  • optional - salt and pepper, to taste

Instructions

  1. Core Roma tomatoes, slice in half and add to NutriBullet Select.
  2. Add fresh basil leaves.
  3. Pulse for 5 seconds, then Blend until ingredients are smooth.
  4. Add garlic, olive oil and tomato juice to blender.
  5. Blend until ingredients are smooth.
  6. Enjoy as a cold summer soup by pouring into soup bowls and serving with croutons
  7. OR
  8. Pour soup into a small stock pot over a medium heat.
  9. Simmer for 30 minutes, stirring occasionally.
  10. When soup is thoroughly warmed, remove from heat, pour into bowls and serve.
  11. Top with shaved Parmesan cheese and/or croutons.

Notes

If you prefer a creamy tomato basil soup: After soup is finished simmering for 30 minutes, add 1 cup of heavy whipping cream. Stir and simmer for 10 minutes. Remove soup from heat, serve and enjoy!

A few more important tidbits about the NutriBullet Select

The NutriBullet has three pre-programmed settings – pulse, blend, and crush. The five variable speeds allow you to chop onions with the same blades as you would dice tomatoes, yet you won’t mush them or turn them into puree unless you want to. There are plenty of customization options when it comes to how you’d like your food prepared.

Although the NutriBullet Select is powerful, it’s not enormous. It can be easily stored in a cabinet or on a countertop and is pretty portable, too. When you travel you don’t have to abandon your smoothie habit.
