In the crazy-hot temps of summer, I’m always looking for a refreshing treat that offers some reprieve. On mornings when the humidity is high, hot coffee just doesn’t hold much appeal, so thank goodness for iced coffee to the rescue. A tall glass of International Delight Iced Coffee offers a great start to a sweltering day!
This sweet, creamy and dreamy coffee is not only ideal for summer sippn’, it’s my very special secret ingredient swap for some scrumptious summer treats, especially brownies. Because chocolate is an essential any-time-of-the-year food group that must be tended to.
If you want to take your summer brownie mix to a new level of rich flavor, the trick is super simple, but one that will leave everyone asking for your recipe. Really, people will wonder how what that “extra” is in your brownie mix that makes they taste so dreamy. It’ll be our secret together that we made a simple swap and whipped them together from a mix!
Ready for this… all you need to do to up the rich and moist factor of your brownies is to swap out International Delight Vanilla (or Mocha) Iced Coffee for the water listed on the ingredient mix. I also like to add a cup full of semi-sweet chocolate chips, too. (You can never have enough chocolate!)
So, the recipe is this:
Brownie Mix (I like to use the dark chocolate ones, look for the mixes that call for 1/3 to a 1/2 cup of water to be added to the mix)
Egg (1 for chewy brownies, 2 for cake-like brownies)
Oil (if recipe calls for it)
International Delight Iced Coffee (to be used in equal measurement to replace the water in the recipe)
Preheat the oven. Mix it all up. Add 1 cup of chocolate chips, if desired. Bake as directed. Cool on a wire rack. Cut, serve and enjoy the bliss with a cup of ID Iced Coffee on the side!
