Rural Mom’s Lunch Leftover Magic Wrap with Marzetti Simply Dressed Salad Dressing

Lunch tends to be the one meal I struggle with daily, likely because I’m typically only preparing a dish for myself.  Generally I head towards leftovers, if there are any, but otherwise, a salad or sandwich or both are my basic staples.  Or perhaps a salad or sandwich made with leftovers…

After awhile that can get a bit monotonous, so I’ve been seeking ways to “jazz” things up for my unhappy tastebuds!

In doing so, I’m also trying to incorporate more and more fresh produce and natural products.  Food that tastes good but serves a higher purpose of nourishing my body’s needs. So, it’s always great to find a new product that helps me fulfill my lunchtime mission like Marzetti Simply Dressed Natural Salad Dressings.

Simply Dressed® salad dressings are all natural, made with extra virgin olive oil, sea salt and canola oil, which provides omega-3. And since they’re all natural salad dressings, they don’t contain preservatives, trans fat, high fructose corn syrup, MSG and artificial flavors.

A simple sandwich becomes a gourmet one when you pair your filler (meat, hummus, fish, and so on) with some veggies and a great dressing. 

For lunch today, I whipped up this simple dish and my tastebuds are doing a happy dance, not only from the rich goodness of the ingredients, but the fresh zing from the Marzetti Simply Dressed Ceasar Salad Dressing.  Want to see what I had?  Recipe follows:

Rural Mom Lunch Leftover Magic Wrap Recipe

1 Low Carb Wheat Wrap (or wrap style of your choice)
Salad Greens (I used an Organic Spring Mix)

Seasoned Tilapia (leftover from dinner last night)
Organic Red Pepper & Feta Cheese Crumbles
Marzetti Simply Dressed Ceasar Dressing (or swap any of the other dressing choices for a new flavor twist)

Lay wrap flat on a plate.
Heat leftover meat or fish (or try unheated based on your preference.)
Wash and spread a handful of salad greens in a line across the center of wrap.  Sprinkly Feta cheese crumbs over salad.  Spread desired portion of meat/fish alongside salad greens. 
Top off with a generous douse of Marzetti Simply Dressed Dressing.  Roll into wrap form and enjoy!


The “magic” is the gourmet taste and ease of preparation.  If I didn’t know any better, I’d think I just picked this up from my favorite coffee shop deli.  The difference is really in the dressing, simply makes the sandwich!

I’m looking forward to dressing up my turkey leftovers by swapping out turkey for the fish in this sandwich creation.
